Chicken Or Turkey Fritters Recipe

Instructions

1. Separate some cold cooked chicken or turkey from the bones and cut into pieces about half an inch thick and an inch and a half long.
2. The pieces need not necessarily be perfect in shape.
3. Sprinkle with salt and pepper, dip into fritter batter, coating well on all sides, and fry in deep hot fat until a golden brown.
4. Drain on brown or soft paper to absorb the grease.

Ingredients for Chicken Mulligatawny Soup Recipe

* 1 chicken (broiler)
* 11/2 quarts water
* 1 tablespoon curry powder
* 3 onions, peeled, chopped fine
* 1/2 cup celery, chopped fine
* 1 cup rice, washed
* 1 apple, peeled, cored, chopped
* Seasonings to taste
* 1 cup white sauce
* (To make White Sauce: scald 1 pint of milk. Melt 1,2 or 3 tablespoons of butter, depending on desired consistency, in a saucepan. Add half a teaspoon of salt, and 1,2,or 4 tablespoons of flour, depending on desired consistency, and let cook for one minute, stirring constantly. Add the milk little by little, stirring gently until it boils. Let it boil for 3 minutes.)

Instructions

1. Put all ingredients together in a kettle.
2. Cover.
3. Let cook for about 3/4 hour.
4. Remove chicken.
5. Dice chicken meat, both dark and white.
6. Put the chicken meat back in the soup.
7. Let boil for 3 minutes.
8. Serve hot.

Chicken Maryland Recipe 1

Ingredients for Chicken Maryland

* 2 medium sized frying or broiling chickens
* 3 tablespoons Argo or Kingsfords Cornstarch
* 1-1/2 teaspoons salt
* 1/8 teaspoons pepper
* 1/2 cup corn oil
* 1 pint white sauce
* Potato or rice croquettes
* Currant jelly

Instructions

1. Clean and disjoint the chickens as for fricassee, then dust with salt, pepper and cornstarch.
2. Heat the corn oil in a frying pan and quickly brown the chicken in it.
3. Reduce the heat, cover closely and cook gently or steam for thirty minutes.
4. For serving, arrange in the middle of a platter with croquettes around the edge.
5. Garnish with cress, parsley or celery tips and pass white sauce.
6. This may be made from the drippings in the pan by adding to them two tablespoons cornstarch, one-half teaspoon salt, few grains pepper and a pint of rich milk.
